Cauliflower Rice and Tomato Pilaf
This dish is a great example of how to put ready-prepared ingredients to good use. It is still very healthy – just take care when buying pastes to check salt and sugar content.
Rice and grain pouches are so widely available now and there is plenty of choice – you could use a rice/quinoa mix or try something a bit different and use the ancient (and now very trendy) grain freekeh.
You will probably have leftovers if you are only feeding two, but the pilaf is perfect to pack in a lunchbox the next day to eat hot or cold.
